The yogurt needs time to ferment so please prepare the yogurt part of the recipe a few days before the big day!
RAW CHRISTMAS BERRY BLAST FROZEN YOGURT RECIPE
1 cup coconut or cashew yogurt – recipe food below.
2 cups strawberries
1 tablespoon maca powder
1 tablespoon mulberries
1 tablespoon goji berries
4 tablespoons coconut nectar/syrup
Blend only 1 cup strawberries with goji berries, mulberries, and 1 tablespoon of coconut syrup. When it is like a jelly consistency, set it aside.
In a another container, blend the yogurt with maca, remaining strawberries, and remaining coconut syrup.
Blend the two lots of mixture together to create a smooth consistency.
Freeze mixture in a shallow pan or bowl in the freezer.
Top with more berries or add sprinkled nuts and enjoy!
COCONUT YOGURT RECIPE
There is a wide range of dairy-free alternatives to yogurt, making it easy for people to still receive the benefits of a cultured food without the animal proteins that may cause allergens in their body system. Dairy free yogurts can be made from coconut and nut-based sources.
1 1⁄2 Cup Young Coconut meat 1⁄2 Cup Cashews, soaked -or any other nut
1⁄2 Teaspoon Probiotics Water if needed to blend
Blend coconut meat, cashews and water until smooth. Add in probiotic and blend until just combined. Place in a bowl, covered by a clean cloth, in a dehydrator at 45 DEGREES CELSIUS, for 8 to 10 hours, or in over with door slightly open and on very low heat for 6 hours. The yogurt needs to be in a warm place, but with a good air-flow.
Once fermented, stir well. The yogurt will develop a crust from being in the dehydrator/oven, which you just stir in. Once dehydrated, place yogurt in airtight container and keep in fridge. Keeps for up to 2 weeks.
