Pudding – Raw Chia For Christmas

It’s that time of year and I am super excited! Excited for the get togethers, the children’s fantasy worlds becoming alive again and excited for all of the creative food, especially the creative pudding’s that get presented on our tables!

CHRISTMAS……….what does it mean to you?

Does christmas make you think…..Oh no, time to put on a few kilos? Time to feel awful in a few weeks time? Time to feel toxic and completely over loaded in your stomach. Does it mean high sugar foods, lots of alcohol or fatty foods that just sit heavy in the gut? 


I am going to be sharing some exciting recipes with you each week on our blog page for you to try out before the big day arrives and you can confidently feel and know that you will not be putting on those extra kilos, or feeling toxic and overloaded. I hope to inspire you to bring some healthy raw christmas dishes to the family or friends table for you and others to enjoy, totally guilt free and life giving to your body.

This recipe is a sweet treat but full of antioxidants and super foods! So get ‘un cooking’ and enjoy a new way of celebratory eating with this christmas pudding!




1 1/2 cups of organic almond milk (can bought from and organic food supplies shop)

1/2 avocado, peeled and seeded

1/4 cup of coconut nectar

2 tbs cacao powder

pinch of sea salt

1/3 cup of chia seeds

1 cup pomegranate seeds – leave some to garnish

1/3 cup pistachio nuts, shelled and roughly chopped – leave some to garnish

3 tsp rosewater

1 tsp vanilla essence/extract

some mint to garnish


Blend in blender the almond milk, avocado, coconut nectar, cacao powder and salt until smooth. 

Place chia seeds in a large bowl and pour the milk mixture over them. Stir until well mixed. Add in most of the pomegranate seeds being sure you leave enough to garnish with at the end. Add in the remaining ingredients that are not garnish ingredients and stir. Add a little water if the pudding seems too thick, remembering the chia seeds in the pudding mixture will expand slightly over night.

Pour into 4 serving bowls and refrigerate over night to set. 

When you are serving the pudding, top them with the left over pomegranate seeds, pistachios and mint leaves. 

Eat immediately and enjoy your healthy, super food and guilt free christmas pudding!
