With These Raw Rocky Christmas Bites You Will Have Your Guests Melting In Your Hands In No Time!
I know, I know! Christmas in Australia can be very very hot in most places….but I cannot resist sharing this amazing raw rocky christmas chocolate recipe with you.
Yes it will melt if you leave it sitting on your table BUT I guarantee you it will not sit there long enough once you have just one person taste test it and have it melt in their mouth!
So keep it in the fridge away from the summer heat until you are absolutely sure people are ready for the richness of the cacao and cranberries in these small bites of flavour.
RAW ROCKY CHRISTMAS BITES RECIPE
1/2 cup cacao powder
1/2 cup raw coconut nectar
1/2 cup of organic coconut oil (melted)
1/3 cup tahini
2 teaspoons of lemon juice
2 teaspoons of vanilla extract
generous pinch of sea salt
Rocky Bites Add Ins
1/2 cup of pecan nuts roughly chopped
1/3 cup of shredded or fresh coconut
1/3 cup of organic dried cranberries
You can get creative and add other nuts or currents to create your Rock Christmas Bites. These are just what I had in my pantry!
Place a medium pot with an inch of water on the stove top and bring to a warm temperature.
Whilst doing that, place all of the ‘chocolate’ ingredients in a a large metal mixing bowl and sit the bowl on top of the pot of water. This is a gentle and affective way of creating your chocolate without over heating it and keep it RAW.
As it warms up mix it together until well combined and just becoming touch warm. Then take it off the heat and add in the rocky bites add ins. Stir well.
You can now either pour the mixture into very, very small cup cake paper holders to make little bites, or you can put it into a medium sized tin lined with baking paper to make a slab that you later break into rough bits.
Place it into the fridge for at least 2 hours to set. Eat immediately when taken out of fridge or risk having a pool of Rocky Christmas bites on your beautiful christmas dinner table!
Enjoy the fact that you and your guests are eating something so delicious but is also good! In these little bites you are indulging in antioxidants, illogic acid (which has been proven to help prevent tumours from growing in cancer), lauric acid, medium chain fatty acids, vitamin c, vitamin e, fibre, magnesium, calcium and so so so much more! I won’t go on.
So guilt……what guilt? There is no room here for guilt when watching your guests melt in your hands when they indulge in your creation of Raw Rocky Christmas Bites!
